As a nutritional science expert, Gail Okray already had an interest in healthy food way before the thought of doing a recipe book ever crossed her mind. However, a life-changing illness ramped up her interest in health and wellness, and the result is this collection gluten-free dessert recipes.
Food has always played a big role in Gail’s life. Growing up helping on her grandparents’ farm, good, healthy food was always in abundance. Summers were spent bailing hay, milking cows, harvesting vegetables from the garden, and helping her mother and grandmother can and freeze fruits and vegetables for the winter months.
Preparing food and experiencing the warmth and love of sharing meals with family have always have been important to her. It was a natural progression for her to study nutritional science.
Gail received her bachelor’s degree in Nutritional Sciences from the University of Wisconsin–Green Bay. After graduation, she worked in the quality assurance laboratory at a lakeshore food company, analyzing nutritional and microbiological components in their USDA-accredited laboratory. She was also a trained sensory-description panelist, tasting a variety of foods.
A life-changing illness caused Gail to leave the lab and find a new beginning. Her passion for health and wellness lead her to Jin Shin Jyutsu®, an ancient Japanese touch therapy. She is currently the owner of Key Elements for Health, located in Green Bay, Wisconsin (USA), where she helps people and animals on their path toward optimal health and wellness.
